Pizza is one of the most famous and appreciated dishes in the world, the symbol of Italian cuisine. If we think about it for a second, we will realize that the pizza is a simple recipe, made up of simple ingredients: flour, yeast and water, tomato and basil. Just one simple dish can make the whole world happy and full. Thanks to its deliciousness and its numerous fans, pizza has been awarded Unesco Heritage in December 2017. It is not only its taste which makes it special, but also the old tradition and history which it encloses.
The authentic Italian Pizza, as we know it today, appearead long time ago in Naples and from that moment on, its recipe has been wisely passed down. During the years, people around the world has created their own pizza recipes, adapting them to their own tastes. Nowadays there are so many different pizzas, starting from the most simple one, Margherita, to more complicated ones, such as, Capricciosa (which includes ham, mushrooms, artichokes, olives) Unlike Italian people (with some exceptions 😜), many foreigners go crazy over Hawaiian pizza, the one with ananas and ham. This has always aroused my curiosity, thus I decided to give it a try. However, to be honest, I am more into the Italian flavors and when in doubt, I have a simple Margherita. I hope everybody loves pizza as much as I do and I would like to share with you a good recipe and my top 5 Italian pizzerias (in Milan). Enjoy folks 🍕!
Step 1: The dough
Put the flour in a bowl with salt, slowly add water and knead for 2-3 minutes. Add oil then continue to knead for 10
minutes. Remember: yeast is already in the flour. The dough it’s ready when it looks smooth and silky.
Put the dough in a bowl, cover it with a damp cloth and let it rest for 15-20 minutes.
Step 2: Base for Pizza
After 20 minutes put the dough in a pan and use your hands to widen it to the edges, being careful not to make it too
thin.
Cover up with transparent film and leave to rise for 3 hours at about 20°C / 68°F of temperature.
Step 3: Cooking
After 3 hours, spread the tomato sauce and then cook the pizza in the pan for 10-15 minutes in a static oven, previously
preheated at 280 ° C / 536 ° F. Remove the pizza, add mozzarella and other ingredients 3-4 minutes before the end of
cooking, then replace it in the
oven for the last 3-4 minutes to finish cooking.
