Bulgur is a whole grain made from cracked wheat. It's packed with vitamins, minerals and fiber. Fiber-rich foods like bulgur may reduce chronic disease risk, promote weight loss and improve digestion and gut health. It's easy to cook and can be added to many dishes, including salads, stews and breads.
Total-time: min. 30 minutes.
Place the bulgur and water in a medium plan, bring to the boil, then remove from the heat, clamp a lid on and leave to steam-cook for 15-20 minutes.
Put the grapes, tomatoes, oils and pul biber in a large bowl. When the bulgur is almost ready, toast the walnuts in a hot, dry frying pan and set to one side.
Then toss the steamed burgur trough the salad, add the walnuts and herbs with salt to teste, stir them through and serve with a bottle of Bulgarian Ugni Blanc (or plain old Sauvignon Blanc).
