What is it?

Blue cheese is cheese made with cultures of mold which give the cheese spots or veins which can vary in colour through various shades of green and blue. It carries a distinct smell, some say it smells like feet and the taste tends to be salty.

My favourite cheese in the world

For my family and I, our favourite blue cheese to have, is the Castello blue cheese. It has the perfect soft texture of a brie with the salty but not too overbearing taste of a true blue cheese.
