I love baking and trying out new things especially when they involve choclate. This cake is definitely one
of my highlights.
This recipe serves 10, takes 15 minutes to prepare with a cooking time of approximately 35 minutes.
INGREDIENTS
250g all-purpose flour
1 tsp baking powder
200g granulated sugar
110g light brown sugar
¾ tsp salt
2 large eggs
120ml neutral oil
180ml sour cream
5ml pure vanilla extract
240ml freshly brewed coffee
INSTRUCTIONS
Preheat the oven to 175°C. Lightly grease and flour your round cake pan.
Mix glour, cocoa, baking powder in a large bowl. Add both sugars and salt and blend well, pressing
out any lumps of brown sugar.
Combine eggs, oil, sour cream and vanilla in a medium bowl and whisk to blend well. Pour into the
bowl with the dry
ingredients and mix with an electric hand mixer on medium-low until blended. It will be thick and
somewhat dry. Add the
hot coffee gradually in two stages to minimize clumps forming and beat until evenly combined and the
batter smooth.
Add to your cake pan and bake for approximately 30 minutes.
Let cool down and carfeully cut so that you have two layers.
