Isaw, a Filipino Delicacy


Isaw served with toyomansi.

Isaw is a popular street food from the Philippines, made from barbecued pig or chicken intestines. It is a type of inihaw (grilled).

Steps on making Isaw:

  1. The intestines are cleaned, turned inside out, and cleaned again.
  2. Repeat the cleaning process several times.
  3. Prep the intestines by marinating it with seasonings and aromatics.
  4. The intestines are then threaded onto the skewers.
  5. Then the intestines are either boiled before grilling, or immediately grilled on sticks.
  6. While grilling, continously baste the intestines with a cooking oil, banana ketchup, and soy sauce mixture.
  7. Serve with your choice of sauce!
Additional information:
They are usually dipped in vinegar or sukang pinakurat (vinegar with onions, peppers, and other spices). They are also usually sold by vendors on street corners during the afternoons
