Baking!!!

A New Journey

I have always loved baking πŸ‘©πŸ»β€πŸ³. It is so soothing and relaxing. Whenever I needed a break, I would bake. Even when I would be overwhelmed with work or with many things to do, I would always squeeze in some baking. No time for laundry but always time for baking 🀣. Baking is like a way for me to turn all the things on my mind into new creations in the oven. I love experimenting with new tastes and ingredients, especially healthy organic ingredients.

Three years ago, baking took on a whole new challenge. At six months of age, my baby was diagnosed with multiple severe allergies, where dairy πŸ₯›, egg πŸ₯š and gluten 🌾 were the principal allergens along with many others. Cooking his first baby meals were a big challenge because he was basically allergic to β€œnormal” foods! Then, came the thought of β€œWhat can he have for his first birthday if he's allergic to everything?!”
That's when my new Baking journey began… On a mission to find the perfect recipe for his birthday cake that would be safe for him to enjoy and not-so-complicated to do!

At first, I was feeling discouraged. Every recipe that I was looking at had always something that he was allergic to. I browsed through so many recipes and yet, couldn't find any recipe that was suitable. A recipe without dairy, eggs, or flour was indeed very hard to find! And put it frankly, most recipes without those ingredients don't actually taste good or the textures were off πŸ₯΄. A few months before his birthday, we did another allergen testing. This time, the reaction to egg was gone! Yay πŸ’•! That was good news but yet, still very challenging for me! So I continued my quest for the perfect recipe. After many trials and wasted batches, I finally came up with a recipe that was perfect for my baby. Since then, it has became a motivation for me to always make delicious dairy-free & gluten-free healthy recipes for him 🧁.
